But not only that. The Tencha leaves, which are used to make matcha, are ground on-site with a stone, just before being delivered by bicycle to Confiture Parisienne. We could call it the “matcha-minute.” The green is denser, the nose more vegetal, and the bitterness more pronounced. It is precisely this frankness that we wanted to preserve. The next step was to find a companion for it. The easy choice would have been white chocolate, like almost all matcha spreads on the market. It whitens, it sweetens, it erases. It transforms a great tea into candy and weighs down the spoon with a fat that adds nothing. We preferred almond. It has body, flavor, real nutritional value, and it delicately stays in the background to let the leaf speak. The almond rounds out the matcha, gives it a base, and makes it spreadable without ever covering it. The paste is a just green, dense, slightly grainy, and long in the mouth.
