A still life that finally moves. Apples and oranges, around 1899. A fruit bowl, a crumpled white tablecloth hastily arranged, a floral sheet in the background, and fruits balancing on a table that, upon closer inspection, is not quite level. Cézanne said he wanted to 'astonish Paris with an apple.' He succeeded. The painting is at Orsay, and visitors stop in front of it without always knowing why. We wanted to keep that intrigue. First, an apple jelly, gently cooked in a copper pot until it becomes clear, the color of pale honey. Then the orange blossom, poured just before the end, for the fragrance of the flesh without the weight of the fruit. And finally, finely cut orange zest, which remains suspended in the jelly like little jewels caught in amber. You can see them through the spoon, you find them under your teeth, and each brings its hint of bitterness that awakens the apple. On the slice of bread, the jelly trembles a little, like the tablecloth in the painting. This is intentional. A still life, they said. This one looks very much alive.
