We purchase cashew nuts from a supplier in their natural raw state, meaning unroasted and unsalted. We roast them according to our own recipe, without using fat, only with a stream of hot air. This process is very important in the production of cashew nut butter. Even a few seconds less or more can change the consistency and flavor of the cashew spread. Subsequently, it is necessary to let the nuts cool completely for several hours before they can be ground. If they were ground earlier, the resulting consistency would not be what we want.
