Gold in Category 20 – Cheeses with Seasonings Inside. Lactic coagulation. Vegetable ash in the center dividing the cheese. Represents duality, tradition, and innovation, the union between Silvia and Paco.
Olavidia (250-300g)
Best Cheese in the World 2022 at the World Cheese Awards. Lactic coagulation matured with molds and vegetable charcoal. Slowly pasteurized goat milk. 15-20 days of maturation. Evolves from a compact texture with notes of cream and yogurt to becoming creamy from the rind towards the center. Complex nuances that change over time. Each consumer chooses their favorite maturation point.
