The base of this delicacy is \u003cstrong\u003equality Moravian bacon\u003c\/strong\u003e, which is smoked for us by butcher Josef Jůza from Březina near Tišnov (1). He prepares it for us using the \u003cstrong\u003etraditional method\u003c\/strong\u003e – marinated \u003cstrong\u003eonly in kitchen salt\u003c\/strong\u003e, (2) without any additional ingredients.\u003c\/p\u003e\n\u003cp\u003eAfter smoking, we \u003cstrong\u003ecut the bacon into small cubes\u003c\/strong\u003e and in a pot, we \u003cstrong\u003erender it\u003c\/strong\u003e (3) until the pieces are beautifully crispy and golden. Then we add onion (4), garlic, vinegar, sugar, coffee, \u003cstrong\u003epaste from walnuts (5)\u003c\/strong\u003e, and other ingredients. We cook everything until the flavors \u003cstrong\u003ebeautifully blend\u003c\/strong\u003e (6) and the mixture reaches the desired consistency (7). Finally, we \u003cstrong\u003efill it into jars and preserve it\u003c\/strong\u003e. This mix became a hit and since then, \"bacon jam\" has spread all over the world.
