Separated by a central T-shaped bone, these two cuts cook together, releasing their juices and offering a melt-in-your-mouth, juicy meat full of nuances. Sourced from a young Polish breed, the Black Pearl comes from heifers under 20 months old, raised in small batches in the Mille Lacs region. Grass-fed and then finished with a mix of grains and beet pulp, they develop a richly colored, slightly tinted meat with fine marbling and sweet, slightly vegetal notes. This T-bone is an ideal cut for grilling or thick pan cooking. The fat melts slowly, the juices stay in place, and the bone enriches the meat with a subtle aroma. Butcher's tip: take it out 1 hour before cooking. Sear over high heat for 3 to 4 minutes on each side, then let it rest. Best shared in thick slices.
