Buckwheat flour is a rich source of fiber, magnesium, manganese, iron, and contains many antioxidants, such as flavonoids. It has a high protein content, as well as essential amino acids, such as lysine, which is often lacking in other grains. Buckwheat flour has a low fat content, but is also rich in healthy fats and omega-3 fatty acids. It may contain traces of soy, milk, eggs, celery, nuts, peanuts, mustard seeds, and sesame.
