Merlot was first, full of juicy fruit, followed by Cabernet Franc with beautiful aromatics, and finally Cabernet Sauvignon, which brought tannin and backbone to the entire cuvée. Each variety fermented separately to preserve its own character. After fermentation, we let the wines rest and then blended them into the final cuvée.
