All steel cooking pieces are equipped with a special patented thermodiffuser bottom by Tarcisio Zani - USA patent 4204607 - consisting of a core of pure aluminum 'trapped' inside a double bottom of stainless steel. The use of this bottom allows for optimal heat distribution on the body of the pot with minimal energy expenditure, and the possibility of using the utensils on gas, electric plates, glass-ceramic, and induction. All handles are designed to slow down heat transmission, paying attention to materials, shapes, and contact surfaces with the body of the pot. The lid fits into a conical shape that prevents it from jumping during cooking, and from releasing steam that unnecessarily dissipates heat.
