Maguillas Liqueur
The maguillas liqueur is made from maguillas sourced from the maguillo, which is the wild relative of the apple tree. It is a small tree that rarely reaches ten meters in height.
It is smaller, more acidic, and less flavorful than the common apple, which is why it is not eaten raw. It is used to make compote, jellies, cider, and vinegar.
It grows in hedges of orchards, edges of meadows, deciduous forests, or pine forests and humid oak groves near streams and cool lands.
How to make maguillas liqueur?
The homemade apple or maguilla liqueur is very easy to make; you will get a delicious fresh and aromatic fruit liqueur, and besides being very inexpensive, you will have an authentic artisanal liqueur created by yourself to drink alone or use in your cocktails.
Ingredients:
- Brandy, pomace, or vodka (approximately 500 ml depending on the jar you are going to use)
- 1 and a half apples (depending on the jar you are going to use) or maguillas for this case
- 1 vanilla pod
- Sugar syrup, made with 50% water and white sugar (equal amounts of sugar and water), in a saucepan add the water and put it on the heat; when the water is hot, start adding the sugar and stir with a spoon until it dissolves, let it cool to room temperature.
Preparation
- Step 1: wash the apples under running water and dry them well, cut a small piece from the ends discarding the stem, do not remove the skin, cut into medium cubes without seeds and without the core.
- Step 2: fill the jar halfway with the apple cubes.
- Step 3: split the vanilla pod in half, and cut it with a knife on one side, add it to the jar.
- Step 4: cover the apple and vanilla with the brandy, pomace, or vodka.
- Step 5: close the jar and let it macerate for 10 to 15 days in a dark place.
- Step 6: filter the mixture into a clean jug using a coffee filter or cloth, also use a kitchen strainer.
- Step 7: measure the same amount of apple macerate and sugar syrup, mix them using a spoon.
- Step 8: transfer it to the bottle where you will serve it and let it rest for a week; your homemade apple liqueur is now ready.
