The harvest took place in the early hours. We decided on an earlier harvest because we wanted to preserve the primary fruity aroma in the future wine, which we succeeded in doing. The must reached a sugar content of 23 °NM after clarification. Through controlled fermentation, we aimed to maintain the character of the vintage in the wine. After fermenting the wine to dryness, the grapes were transferred to barrels, where they underwent 12 months of aging on fine lees.
