How Quince Vejmrda is Made
For this traditional delicacy, in our unconventional interpretation, we primarily need ripe fruits of the common quince. We usually collect them in October when they turn yellow and smell wonderful (1). The quinces must be cut into smaller pieces (2) and then boiled in a cauldron until soft. The boiled quinces are then strained into a fine puree (3). From this, we either immediately make the vejmrda or vacuum pack it into bags and freeze it for later processing.
Another equally important ingredient of the vejmrda is horseradish (4). We order it from EKO farm Úlovice in Bohemia, as we have not yet found a grower in Moravia who could supply it to us in the required quality and quantity. Working with horseradish is hellish – we have to grate it in a blender. This task cannot be done without a mask and goggles (5), and even then, after a few minutes, the operator needs fresh air and ideally to wash their face with water. It is really intense. Fortunately, we arranged with the supplier to deliver it already grated and packaged, which saved us a lot of tears and pain. :)
The grated horseradish is then mixed with quince puree, sugar, and beef broth (6), which we prepare in advance, along with other ingredients. The prepared vejmrda is then filled into jars and canned (7). Immediately after production, the horseradish in the vejmrda is very pronounced and has a kick, but over time its strength diminishes. However, if you feel it has become too weak, just grate a piece of fresh horseradish.
History of Vejmrda
Vejmrda is a traditional delicacy made from horseradish, apples, and broth. It appears in old cookbooks for several centuries. Although you might expect some tasteless joke after reading the name, this name originates according to the etymological dictionary of the Czech language from Mr. Machka from a time when the word mrdati or mrcati was commonly used as a synonym for expressions: wagging the tail, to shake, or metaphorically: to grow thin roots. Because horseradish is full of small ragged roots, the name vejmrda was created. Another possible explanation is that the word mrdati referred to the motion while grating horseradish.
