We usually collect them in October when they turn yellow and smell wonderful (1). The quinces must be \u003cstrong\u003ecut into smaller pieces\u003c\/strong\u003e (2) and then \u003cstrong\u003eboiled\u003c\/strong\u003e in a cauldron \u003cstrong\u003euntil soft\u003c\/strong\u003e. The boiled quinces are then \u003cstrong\u003estrained into a fine puree\u003c\/strong\u003e (3). From this, we either immediately make the vejmrda or vacuum pack it into bags and freeze it for later processing.\u003c\/p\u003e\n\u003cp\u003eAnother equally important ingredient of the vejmrda is \u003cstrong\u003ehorseradish\u003c\/strong\u003e (4). We order it from \u003cspan\u003eEKO farm Úlovice\u003c\/span\u003e in Bohemia, as we have not yet found a grower in Moravia who could supply it to us \u003cstrong\u003ein the required quality\u003c\/strong\u003e and quantity. Working with horseradish is hellish – we have to grate it in a blender. This task \u003cstrong\u003ecannot be done\u003c\/strong\u003e without \u003cstrong\u003ea mask and goggles\u003c\/strong\u003e (5), and even then, after a few minutes, the operator needs fresh air and ideally to wash their face with water. \u003cstrong\u003eIt is really intense\u003c\/strong\u003e. Fortunately, we arranged with the supplier to deliver it already grated and packaged, which saved us a lot of tears and pain. :)\u003c\/p\u003e\n\u003cp\u003eThe grated horseradish is then \u003cstrong\u003emixed with quince puree\u003c\/strong\u003e, sugar, and \u003cstrong\u003ebeef broth\u003c\/strong\u003e (6), which we prepare in advance, along with other ingredients. The prepared vejmrda is then \u003cstrong\u003efilled into jars and canned\u003c\/strong\u003e (7). Immediately after production, the horseradish in the vejmrda is very pronounced and has a kick, but over time its strength diminishes. However, if you feel it has become too weak, just grate a piece of fresh horseradish.\u003c\/p\u003e\n\u003ch2\u003eHistory of Vejmrda\u003c\/h2\u003e\n\u003cp\u003eVejmrda is a \u003cstrong\u003etraditional delicacy\u003c\/strong\u003e made from horseradish, apples, and broth. It appears \u003cstrong\u003ein old cookbooks\u003c\/strong\u003e for \u003cstrong\u003eseveral centuries\u003c\/strong\u003e. Although you might expect some tasteless joke after reading the name, \u003cstrong\u003ethis name\u003c\/strong\u003e originates according to the etymological dictionary of the Czech language from Mr. Machka from a time when the word \u003cstrong\u003e\u003ci\u003emrdati\u003c\/i\u003e\u003c\/strong\u003e or \u003cstrong\u003e\u003ci\u003emrcati\u003c\/i\u003e\u003c\/strong\u003e was \u003cstrong\u003ecommonly used\u003c\/strong\u003e as a synonym for expressions: \u003cstrong\u003ewagging the tail\u003c\/strong\u003e, \u003cstrong\u003eto shake\u003c\/strong\u003e, or metaphorically: \u003cstrong\u003eto grow thin roots\u003c\/strong\u003e. Because \u003cstrong\u003ehorseradish\u003c\/strong\u003e is full of small \u003cstrong\u003er\u003c\/strong\u003eagged roots, the name vejmrda was created.
