Refošk Black Baby 2025: lively, juicy and distinctly Istrian

Refošk Black Baby 2025 is a younger, more direct interpretation of refošk from Slovenian Istria. It is created for moments when we desire the character of dark Istrian wine, but in a fresh, drinkable, and relaxed form.

From the soil to the glass

Refošk at Domačija Butul grows on clay-silty soils of the coastal countryside. This landscape and proximity to the sea express themselves in the wine as vibrant freshness, fruitiness, and a recognizable Istrian signature. The name of the variety is often associated with the Latin term Rex Fuscus, "king of darkness", which beautifully describes its deep color and reputation as a red wine.

In the glass

An intense ruby color with violet hues is accompanied by aromas of blackberry, blueberry, ripe cherry, and fresh dark fruit. The taste is juicy, lively, and pleasantly structured. The tannins preserve the true character of refošk, yet remain soft enough for the wine to be accessible and enjoyable even in its youth.

With food

Black Baby pairs excellently with Istrian cold cuts, prosciutto and pancetta, grilled meats, pasta with meat sauces, pizza, stews, and roasted vegetables. Its freshness nicely balances even somewhat richer dishes, making it a reliable choice for a relaxed lunch or dinner with friends.

Serving

Serve slightly chilled at around 14–16 °C. In a larger glass, the dark fruit, freshness, and gentle spiciness of the wine will open up even more beautifully.
