Patented since 2007, this new method of alcoholic fermentation at a depth of 15 meters in the Atlantic Ocean has proven its taste interest by completely altering the initial aromas of the selected grape varieties. With the SOCOA range, we share this madness with passionate producers eager to discover what their grape varieties reveal after 6 months of immersion. For this ephemeral cuvée, Laurent Cassy, Vice-President of Organic and Biodynamic Winemakers of Aquitaine and owner in Morizès, participated in the experiment and entrusted us with his finest Malbec. After a second alcoholic fermentation in a tank at 15 meters deep and 6 months of maritime agitation in sync with the tides and Atlantic storms, this magnificent Malbec reveals astonishing aromas of blackcurrant and other red fruits. Unfiltered and with no sulfites, a slight effervescence ensures good preservation of this nectar. Limited quantity of 1,300 bottles.
