Winemaker's Diary:
Each variety was vinified separately. Subsequently, malolactic fermentation took place. Throughout the year, these wines matured individually in premium oak barrels from the SEGUIN MOREAU brand with varying degrees of toasting. Each wine was bottled separately from the barrels. In December, a blending committee took place, where the best ratio was determined. The wines were combined and placed back into barrels for 6 months. 1/3 of the total volume remained in a stainless steel tank to preserve the fruity flavor. The bottled and stored wine rested for 4 months, gaining bottle maturity.
Wine Service:
At a temperature of 15 - 17 °C in Bordeaux-type red wine glasses with a volume of 500 – 650 ml, we recommend decanting the wine into a carafe before serving.
Food Pairing Recommendation:
Beef flank steak with stewed green beans and bacon, venison ragout with cranberries and Karlovy Vary dumplings, dried pork ham and homemade cold cuts, hard aging cheeses made from cow's milk.
