What exactly are Cherries from Líšeň
Cherries from Líšeňare indeed preserved cherries, which in itself would not be unusual, but they are marinated in a so untraditional brine that their taste can perfectly surprise you. In addition to fragrant spices, you will find garlic and vinegar in it. You will be surprised by the unexpected harmony of sweet, sour, spicy, and subtly garlicky flavors. Thanks to this unusual combination, they offer wide possibilities of use – they are great with meat, in desserts, with cheeses, and in salads.
How we make the cherries
Although the name suggests that the cherries come from the Brno suburb of Líšeň (7), this is not entirely true. The final recipe was indeed created in Líšeň at our Martin's cottage, where he perfected it, and this name rhymed beautifully for us. :) However, the actual cherries come from the village Ponikev, because although we tried to find real cherries from Líšeň, we did not come across any cherry orchard in the vicinity.
We collect the cherries when they are fully ripe to ensure they are as sweet as possible (1, 2). After bringing them to our production, we soak them in vinegar water overnight, which drives out any potential worms. Then we manually pit the cherries (3, 4) – it is indeed a tedious task, but no other method has been as effective. While pitting, we prepare the brine (5), which we then pour over the cherries in jars weighed to an exact weight. After that, we just seal the jars (6), pasteurize them, and after attaching a label or tying a ceramic tag (8), they are ready to be sent to you.
