What is Bacon Jam?
How best to characterize Bacon Jam? Simply put, it is bacon jam. The base of this delicacy is quality Moravian bacon, which is smoked for us by butcher Josef Jůza from Březina near Tišnov (1). He prepares it for us using a traditional method – marinated only in kitchen salt, (2) without any additional ingredients.
After smoking, we cut the bacon into small cubes and in a pot, we render it (3) until the pieces are beautifully crispy and golden. Then we add onion (4), garlic, vinegar, sugar, coffee, walnut paste (5), and other ingredients. We cook everything until the flavors beautifully meld (6) and the mixture reaches the desired consistency (7). Finally, we pack it into jars and preserve it. You can learn more in our blog article.
History of Bacon Jam
We must admit that Bacon Jam is not our original invention. In the world, it is known as "bacon jam", allegedly created by chef Chris O'Connor. In a restaurant in East London, he combined onion chutney with smoked bacon and other ingredients. This mix became a hit, and since then, "bacon jam" has spread worldwide. Every recipe is a bit different – ours is based on quality Moravian bacon and walnut paste, which gives it a distinctive spicy touch.
