How to prepare Galician cockles: Soak them in cold water with sea salt for 30 minutes to expel the sand. Steam them in a covered pot for 2-3 minutes until they open. Discard any that do not open. Serve with a few drops of lemon or with a quick marinade of garlic, oil, and parsley.
Storage: Keep refrigerated covered with a damp cloth. Consume within 24-48 hours after receiving the order.
