Royal jelly is the most valued bee product. It is a substance secreted by young bees and is intended for the nutrition of the bee larvae during the first three days of life, while the queen bee is fed exclusively with royal jelly throughout her life.
In its authentic form, royal jelly is white to pale yellow in color, thick liquid, with a characteristic smell and slightly sour taste. It contains a complex mixture of ingredients: 10-18% proteins (albumins, globulins, glycoproteins, lipoproteins, amino acids), 9-15% sugars (mainly glucose and fructose), 1.5-7% lipids, a lot of key minerals (potassium, sodium, calcium, magnesium, iron...), vitamins (the entire group of B vitamins, vitamins C, H, D, A, K, and E). Royal jelly also contains some enzymes, neurotransmitters (acetylcholine and choline), nucleic acids, and sex hormones (estradiol, progesterone, testosterone).
It also contains 1.5-2% of the valuable 10-hydroxy-2-decenoic acid (10 HDA), which has only been found in nature in royal jelly, and 3,10-dihydroxy decanoic acid (3,10-DDA).
