Fermented Green Walnuts with Spices
Fermented green walnuts are a special sweet-sour preserve from Domačija Butul, where salt, the strong Istrian sun, and selected spices come together. Their taste is simultaneously sweet, sour, salty, and umami.
From Green Walnut to Black Delicacy
Young green walnuts are first pierced and fermented in brine with salt from Sečovlje. After fermentation, they are placed in the strong summer sun, where they slowly and completely turn black and develop a deep, rich character.
Spiced Syrup from Sri Lanka
After darkening, the walnuts are poured over with an aromatic sweet syrup made with our selected spices from Sri Lanka. The spices add warmth and complexity without overshadowing the character of the fermented walnut.
How to Serve Them
They are excellent with strong and aged cheeses, as a side to red meat, and with smoked dishes and grilled foods. Serve them sliced thinly, along with a few drops of spiced syrup.
