This, when combined with other ingredients, creates a unique jelly with a \u003cstrong\u003ecitrus-forest aroma\u003c\/strong\u003e.\u003c\/p\u003e\n\u003ch2\u003eWhat is the jelly good for\u003c\/h2\u003e\n\u003cp\u003eIt is ideal as an accompaniment \u003cstrong\u003eto both mild and more mature cheeses\u003c\/strong\u003e, especially those with blue mold. It also pairs wonderfully with \u003cstrong\u003efish, game\u003c\/strong\u003e, or mushrooms and surprisingly works well in \u003cstrong\u003emixed drinks\u003c\/strong\u003e and cocktails.\u003c\/p\u003e\n\u003ch2\u003eHow does the jelly taste\u003c\/h2\u003e\n\u003cp\u003eIt has a scent of needles, but you will also find fresh notes reminiscent of lime. The taste is sweet, slightly citrusy and tangy, with a light salty aftertaste. It easily scoops onto a spoon and spreads with a knife.\u003c\/p\u003e\n\u003ch2\u003eHow we make the jelly\u003c\/h2\u003e\n\u003cp\u003eWe knew that \u003cstrong\u003eyoung spruce shoots\u003c\/strong\u003e are traditionally \u003cstrong\u003epreserved in sugar\u003c\/strong\u003e to make \u003cstrong\u003esyrup\u003c\/strong\u003e, which our grandmothers used for various \u003cstrong\u003ecolds\u003c\/strong\u003e and similar ailments. At the same time, we also knew that spruce shoots are an \u003cstrong\u003einteresting addition in the kitchen\u003c\/strong\u003e, and we started thinking about how to best utilize them. Since we already had successful \u003ca href=\"https:\/\/www.chutmoravy.cz\/vinnezele\"\u003e\u003cstrong\u003ewine jelly\u003c\/strong\u003e\u003c\/a\u003e in our range, we thought: why not make jelly from spruce shoots as well?\u003c\/p\u003e\n\u003cp\u003eWe arranged with the \u003cstrong\u003eforests of the city of Brno\u003c\/strong\u003e to help \u003cstrong\u003ewith the pruning of invasive trees\u003c\/strong\u003e in the Moravian Karst, specifically near the village of Olomučany. And it was here that we had a \u003cstrong\u003epleasant coincidence\u003c\/strong\u003e that gave our jelly its unique character. In addition to spruces (1), there were also many uncoordinated \u003cstrong\u003eDouglas firs\u003c\/strong\u003e (2) growing in the forest that also needed to be pruned. We decided to collect their young shoots as well. (3) Even during the collection, we were captivated by \u003cstrong\u003etheir scent\u003c\/strong\u003e – completely different from that of spruce. This difference became fully apparent in the car where we transported the shoots. Douglas fir has a very specific aroma that \u003cstrong\u003eresembles lime\u003c\/strong\u003e. Combined with spruce, it created a \u003cstrong\u003eunique blend of aromas and flavors\u003c\/strong\u003e that gives our \u003ca href=\"https:\/\/www.chutmoravy.cz\/zele-z-jehlici-rynk\"\u003epine needle jelly\u003c\/a\u003e its distinctive character.\u003c\/p\u003e\n\u003cp\u003eThe picked shoots are then \u003cstrong\u003epacked into barrels\u003c\/strong\u003e, where they are \u003cstrong\u003elayered with sugar\u003c\/strong\u003e (4) and left to \u003cstrong\u003erest for several months\u003c\/strong\u003e. The sugar gradually draws out the water with flavor and aroma from the twigs, transforming into a thick, \u003cstrong\u003efragrant syrup\u003c\/strong\u003e. Finally, we heat everything in a kettle (5) to dissolve the remaining sugar, and we bottle the syrup. (6) From it, by adding a few \u003cstrong\u003eadditional ingredients\u003c\/strong\u003e, we create this forest-scented jelly.
