We harvest them mainly in October when the fruits turn yellow and are wonderfully fragrant (1). The quinces must be \u003cstrong\u003ecut into smaller pieces\u003c\/strong\u003e (2) and then \u003cstrong\u003ecooked down\u003c\/strong\u003e in a pot until they are \u003cstrong\u003esoft\u003c\/strong\u003e. The cooked quinces are then \u003cstrong\u003epassed through a fine sieve to make a puree\u003c\/strong\u003e (3), which we either use immediately to make the vejmrda or vacuum seal and freeze for later use.\u003c\/p\u003e\n\u003cp\u003eAnother important ingredient of the vejmrda is \u003cstrong\u003ehorseradish\u003c\/strong\u003e (4). We order it from \u003cspan\u003eEKO farm Úlovice\u003c\/span\u003e in Bohemia because we have not yet found a supplier in Moravia who can provide us with the \u003cstrong\u003erequired quality\u003c\/strong\u003e and quantity. Processing horseradish is a demanding task – we have to grate it in a blender. This activity \u003cstrong\u003erequires protective gear\u003c\/strong\u003e, such as a mask and goggles (5), and even then, it is necessary to take a break for fresh air and wash your face with water after a few minutes. \u003cstrong\u003eIt is a very intense experience\u003c\/strong\u003e. Fortunately, we arranged with the supplier to provide us with pre-grated horseradish, saving us a lot of tears and pain. :)\u003c\/p\u003e\n\u003cp\u003eThe grated horseradish is then \u003cstrong\u003emixed with quince puree\u003c\/strong\u003e, sugar, and \u003cstrong\u003ebeef broth\u003c\/strong\u003e (6), which we prepare in advance, along with other ingredients. The prepared vejmrda is then \u003cstrong\u003efilled into jars and canned\u003c\/strong\u003e (7). Immediately after production, the horseradish in the vejmrda is very sharp, but over time its intensity diminishes. If you feel that the vejmrda is too mild, just grate a piece of fresh horseradish.\u003c\/p\u003e\n\u003ch2\u003eHistory of Vejmrda\u003c\/h2\u003e\n\u003cp\u003eVejmrda is a \u003cstrong\u003etraditional dish\u003c\/strong\u003e made from horseradish, apples, and broth. It appears in \u003cstrong\u003eold cookbooks\u003c\/strong\u003e for \u003cstrong\u003emany centuries\u003c\/strong\u003e. Although the name might bring a smile, \u003cstrong\u003eits origin\u003c\/strong\u003e, according to the etymological dictionary of the Czech language, comes from Mr. Machka from a time when the word \u003cstrong\u003e\u003ci\u003emrdati\u003c\/i\u003e\u003c\/strong\u003e or \u003cstrong\u003e\u003ci\u003emrcati\u003c\/i\u003e\u003c\/strong\u003e was \u003cstrong\u003ecommonly used\u003c\/strong\u003e as a synonym for words like \u003cstrong\u003ewagging the tail\u003c\/strong\u003e, \u003cstrong\u003eto shake\u003c\/strong\u003e, or in a figurative sense: \u003cstrong\u003eto sprout thin roots\u003c\/strong\u003e. Because horseradish is full of small \u003cstrong\u003efrayed roots\u003c\/strong\u003e, the name vejmrda was created.
