We sought everything one expects from rosé — the color of flushed cheeks, fruity aroma, and gentle acidity — and brewed it in a way that will remind you of summer evenings. No more. Although we know many traditional old beer styles (lambic, oud bruin, flanders red, Berliner Weisse...) that serve as inspiration, modern brewing has transformed sour beers. Sour beers are a category where the smallest raw material — microorganisms — plays a central role. Wild yeasts and bacteria were responsible for the beer going sour.
