The alheira is a smoked sausage.

According to tradition, this sausage was created by the New Christians who secretly continued to keep the customs of their renounced Jewish religion in order to give the impression to society that they were accepted and well-integrated Christians. Since Judaism prohibited the consumption of pork, some of the supposedly newly converted would have invented a sausage where discreetly poultry meat replaced the pork, traditional among Christians.

Dom Casel recreates the story by adapting the ancient recipe to contemporary times. A recipe adjusted between the palates of those who have the gift of making sausages, and the culinary wisdom of Chef Flávio Silva.

Preparation Method: Pierce the alheira superficially in several places.
Fry, grill, or bake in the oven.
