Welcome to a small concert of flavors. The first part features authentic crackling spread made from Moravian pigs, to which subtle smoky notes are gradually added. Then, light chords of baked apples, onions, and garlic resonate, followed by the deep umami flavor of black garlic and gourmet yeast. The final part belongs to the sweet and sour harmony of dried plums marinated in wine. And that was just the first spoonful. :)
What is Crackling Chocolate
A delicate crackling delicacy in which flavors gradually unfold, including smoked cracklings, baked apples with onions, black garlic, and Moravian plums marinated in wine. Ideal on fresh bread, toasted baguette, or by the spoonful.
How it Tastes
Crackling chocolate is a delicate spread with pieces of cracklings and marinated plums in wine. It is just the right amount of salty, with a light sweetness from apples and plums, complemented by the umami flavor of black garlic and gourmet yeast with a light smoky aroma from the smoked cracklings.
How We Make It
From back fat (1), we render crispy cracklings (2), which we then lightly smoke on fruit wood. In part of the rendered fat, we briefly sauté apples, onions, and garlic (4) and then strain and grind them finely. The cracklings (2), black garlic (3), and dried plums (5), which we marinated the day before in Moravian wine, are ground into coarser pieces (6) and everything is mixed together, including the fat. We season, spice, and finally add gourmet yeast. Everything is well mixed and filled into jars (7) and then sterilized in an autoclave.

Crackling Chocolate is our own recipe, which we refined together with chef Tomáš Levý. As with most of our products, we went through the phase of the initial idea, various attempts, testing, and fine-tuning versions until we reached the final product, which we stand behind and hope will appeal to you as well.
