Its fine crust, ivory with blue or white marbling, hides a soft and smooth paste that becomes runny over time. Its taste evolves with aging: when young, it is mild and milky, with vegetal and floral aromas; more mature, it develops stronger goat notes and a slight hint of hazelnut.
