The United Kingdom, at the height of its empire, had many thirsty people around the world. However, some climates were not suitable for brewing beer, including India. But India, as one of the most important colonies, needed beer. The London brewery Bow was one of the first to send its pale ale on a six-month journey around Africa to India in the late 18th century. The beer was preserved on ships by a higher alcohol content and intense hopping. At the same time, it had a high degree of fermentation or little residual sugars, in wine jargon — it was very dry. The combination of bitterness and dryness emphasizes the drinkability of the beer, which surely appealed in the hot Indian climate. The popularity of IPA in the 19th century was also due to the higher quality of beer from the breweries of Burton. Certainly because of the mineral-rich Burton water sources that positively affect the bitterness and rich hop aroma. Calcium sulfate, known as Burton salt, helps with the intense hopping of the beer, rounding out the bitterness. Our Coffee Stout was created when Marko, the then manager of the co-working space Poligon, gathered us in the former tobacco factory. He said we should throw a party — us and the coffee roasters. The idea immediately arose that we would also have a joint product for this party — beer with coffee. Later, we devoted much more attention to this successful combination and developed a recipe. The result is a dark luxurious beer with real coffee. Omar from the Escobar roastery chose the Marcala coffee from Honduras, his homeland. Marcala pairs well with dark barley malts and adds notes of caramel, hazelnuts, and milk chocolate. The combination gives a rich body with an emphasis on the sweetness of the barley and the aroma of cold-brewed coffee. The brew also impressed the international panel of judges at the World Beer Idol competition in the Czech Republic and received a silver medal among all beers at the competition. Where do coffee beers come from? To be precise, it all started in the living room of Mikkel Borg Bjergsø in Denmark. When he brewed a dark beer with friends, he aged it in a barrel, which leaked on the floor, and to compensate for the loss, he brewed some coffee in a coffee maker and poured it into the beer. The new product sparked excitement among readers of beer portals, and from this, a subculture of beer 'geeks' was born. In some cases, precision and knowledge of limits prevail over creativity. We are talking about classic beer styles that offer comfort of familiarity and refuge of simple decisions in the tyranny of too many choices. Among them is also the classic of the craft world — pale ale. Yes Boss is a light brew that surprises with a fruity aroma of citrus and coconut and caresses with a pleasant bitterness. A boss-like pale ale that contains a new variety of Slovenian hops, Styrian (Savinja) Wolf. In terms of color and alcohol, it nicely follows the established guidelines of the style, but the whole is unique and pleasant. With a combination of hops, we achieved a unique taste that challenges other brewers to copy it. The pleasant caramel body and short bitterness ensure that the glass empties itself. What does pale ale mean? This term means nothing more than light beer. But it is not so self-evident if we know that light beer could not just be made like that! About 200 years ago, the British first developed a new technology for malting barley. This allowed the malt to not be roasted, as it was no longer dried over an open fire, but in hot air. Therefore, it resulted in a nice light beer. With this invention, they boasted so much that they already indicated from afar with the name pale, which means pale, light beer. What is the Time beer series? Pelicon Time is a series of rich and strong beer styles that we brewed between 2017 and 2020. These are strong brews that we left to rest for a year in various distillate barrels. The beer waits and breathes with the environment, and during this process, interactions occur between the beer, wood, and oxygen. What results is a unique time capsule. About the history of aged beers: For several years, Slovenia had the oldest closed beer in the world. Then, this honor was taken from us by a beer discovered somewhere else in Europe. These record-holders may not have been brewed with the intention of lasting a hundred years, but many beers have. Some of them are still available and consumed. Of course, we wanted to mix in with these as well, with Pelicon's Time beer line, which we have been brewing since 2017. Before the invention of stainless steel, brewers used wooden vessels for fermenting, transporting, and serving beer. However, since it was difficult to clean the wooden pores, all beers in the past were more or less 'infected' with various cohabitants in the brewing equipment. Resourceful brewers made beer with them in mind. We are particularly interested in the 'breathing' of wooden barrels. Barrels expand and contract with temperature fluctuations, absorbing and expelling liquid in the process. From this interaction, new, more interesting aromas and flavors can emerge with proper aging that otherwise would not exist. All of this requires time. And time becomes an interesting component of this complex process. Time becomes an ingredient in the beer that affects not only the brew but also the brewer's will, self-control, and patience. To gather as much information as possible, our journey took us from northern Norway through the Netherlands to the USA. We spoke with numerous fellow brewers who shared their long-term experiences and advice with us. To date, with the help of all the gathered information, we have aged in barrels old ale (Time 2017), wheat wine (Time 2018), rye wine (Time 2019), and finally imperial stout (Time 2020).
