The Black Pearl beef L-bone is a unique cut, carved from the sirloin and retaining the L-shaped bone that gives it its name. This detail is not trivial: during cooking, the bone releases rich juices that enhance the natural flavors of the meat and structure its tender and juicy texture. Raised in the heart of the Mille Lacs region in Poland, Black Pearl heifers benefit from a unique diet combining grass, grains, and beets. This unique composition gives the meat a slightly purplish color, but above all, an atypical taste, slightly salty, with a subtle vegetal note reminiscent of beetroot. The L-bone retains the tenderness of Angus while offering a finer and more distinctive expression of the meat. It is suitable for classic cooking methods such as pan-frying or barbecuing, without any special adjustments, except for the care to sear it well and let it rest.
