The Chocolate Caramel Biscuit Spread: toffee is this long-cooked, dense, and rich English caramel, which has become an object of affection on the other side of the Channel. It inspired our Parisian version of the recipe. At the center of each jar, a heart of salted butter caramel hand-piped with Isigny butter. Surrounding it, a 100% cocoa spread, dense, bold, and uncompromising. Inside, real pieces of Scottish shortbread, the biscuit that housewives of the Highlands shaped under Mary Stuart, three parts flour, two parts butter, one part sugar. By the spoonful, the texture surprises: the spread flows gently, the biscuit resists for a moment, and at the heart, the Isigny caramel holds its own, a clear counterpoint to the deep cocoa. On warm brioche, on a biscuit to finish a meal, in the hollow of a sugar crepe, or by the spoonful, just as it is, in the chill of an evening.
