The Galician beef ribeye is an iconic cut, favored by meat enthusiasts. It comes from blonde cows in Galicia, raised according to traditional methods in the northwest of Spain. These cattle live in extensive pastures and are slaughtered late, between 8 and 15 years, allowing the meat to develop a rare depth of flavor. Additionally, it undergoes a dry aging process on the bone for about 28 days, which enhances tenderness and concentrates flavors. This ribeye is ideal for controlled cooking, whether in a pan or on the barbecue, preferably using indirect heat to preserve the integrity of the intramuscular fat. A simple quality salt will suffice to reveal its full richness. Butcher's tip: take it out of the refrigerator 45 minutes before cooking. Sear it over high heat for 1 minute on each side, then let it cook gently until the desired rosy center is achieved. Rest for 5 minutes before serving for perfectly distributed juices.
