What are garlic sticks
Garlic sticks are young garlic shoots pickled in a sweet and sour spiced brine. This delicacy has a rich history – many housewives in the past preserved garlic shoots in this way as an ingredient for soups, sauces, meats, or spreads. Their delicate, less pungent garlic flavor was a pleasant alternative to strong garlic.
We were particularly attracted to this ingredient because most farmers consider young shoots to be waste, which is left in the field during the spring trimming of the shoots. However, they are a tasty and juicy ingredient that can be wonderfully utilized.
How the sticks are made
The production of garlic sticks begins when farmers bring us freshly cut shoots. (1, 2) However, they are quite awkward and twisted, which complicates their processing. (3)
After thoroughly washing the shoots, they need to be cut into approximately 4 - 5 cm long pieces. This is the most demanding part of the entire process. The team works with scissors, and each shoot must be individually adjusted (4) to the correct length. This year we first tried a new technique for bulk processing of the shoots, which worked, but ultimately did not speed up the process as we expected. The shoots are too twisted, and handling them is still challenging.
The cut pieces of shoots are then packed into jars (5), exactly to the desired weight, and then covered with the prepared brine. (6) After sealing the jar, they undergo pasteurization and are labeled. (7)
