What is Green extra sour plum sauce?
Green extra sour plum sauce is a side sauce inspired by the Georgian sauce Tkemali. However, it is made from local Moravian ingredients. The main ingredient in this sauce is unripe green plums (mirabelles), which together with fresh herbs (dill, mint, and coriander), garlic, and spices create the unmistakable flavor of this sauce.
How does it taste?
The taste of green plum sauce is slightly fruity from the plums, with a full herbal and spicy flavor and a pronounced acidity in the aftertaste.
How we make it
We cook the green plums and strain them from the pits and skins into a fine puree. This is mixed with fresh herbs, spices, and other ingredients and briefly boiled. We fill it into jars and then pasteurize them.
What to use it for
The sauce is perfect for all types of meat preparations. Ideally, it goes well with fattier meats, whether roasted, grilled, or as an ingredient in mayonnaise or sauces. Due to its strong flavor and acidity, it can also complement meats with more pronounced flavors, such as lamb. You can also use it as a dipping sauce for snacks or vegetables.
