An exceptional cut for simple yet unforgettable meals. Butcher's tip: Take your T-bone out to room temperature 1 hour before cooking. Sear it for 2 to 3 minutes on each side over high heat, then let it finish cooking gently over medium heat or in the oven at 180 °C to maintain a pink center. After cooking, let the meat rest under a sheet of aluminum foil before slicing: the bone will continue to radiate heat and enhance the flavor.
