From our famous L'Ancienne, it is now a collector's item and a reminder that it is possible to produce a reproduction of absinthe that lay forgotten in a cellar for a hundred years. Our techniques and experiences are evolving and improving, and therefore it is time to come up with something new.
Justifiée & Ancienne (pronounced as justifie e ansien, translated as Justified and Ancient) is the successor to L'Ancienne.
Like it, it is made from the finest wine distillate and unique herbs, aged in a French oak barrel for a perfect experience reminiscent of consuming a 100-year-old drink. Each batch is different. Each reflects a specific barrel and a specific vintage.
Production is highly irregular due to the demanding manufacturing process and raw materials; we produce a maximum of two barrels (a total of 450 liters) every two to three years. Therefore, Justifiée falls into the limited editions. Limited due to quantity and irregular production.
