What is Bacon Jam
How best to describe Bacon Jam? Simply put, it is bacon jam. The foundation of this delicacy is honest Moravian bacon, which we have smoked by Mr. butcher Josef Jůza from Březina near Tišnov (1). He prepares it for us in a traditional way – marinated only in kitchen salt, (2) without any additional ingredients.
How it Tastes
Bacon Jam has a jam-like consistency or chutney with pieces of bacon. It has a coarser texture on the tongue, and the first taste is sweet, salty, sour, complemented by a smoky note of bacon. At the end, a pleasant spicy aftertaste appears.
How it is Made
After smoking, we cut the bacon into small cubes and in a pot, we render it (3) until crispy golden pieces are formed. Then we add onion (4), garlic, vinegar, sugar, coffee, walnut paste (5), and other ingredients. We cook everything until the flavors beautifully combine (6) and the mixture achieves the ideal consistency (7). Finally, we jar it and preserve it. History of Bacon Jam
We admit without shame that Bacon Jam is not our original invention. In the world, this delicacy is known as "bacon jam" and its creator is chef Chris O'Connor, who allegedly mixed onion chutney with smoked bacon and other ingredients in a restaurant in East London. This mix quickly became a hit, and since then, "bacon jam" has spread worldwide. Every recipe is a bit different – ours is primarily based on high-quality Moravian bacon and walnut paste, which gives it a unique spicy touch.
