Winemaker's Diary:
The hand harvest of healthy grapes of exceptional quality took place
in our Sari vineyard during beautiful autumn weather. The grapes were gently destemmed and subsequently pressed. The juice obtained in this way was statically clarified at a controlled temperature. After clarification, fermentation took place in a stainless steel container at a temperature of 16 – 18 °C.
After fermentation, the finished wine was transferred into new 300l barrels where it aged for 9 months. During its stay in the barrels, the wine was regularly monitored. Over time, the wine was drawn from the barrels until it was finally bottled after more than a year.
Food Pairing:
Rosemary chicken with a butter sauce made from white wine, which enhances the characteristic buttery flavor of this wine.
Wine Service:
At a temperature of 8 - 10 °C in slightly closed tulip-shaped glasses with a volume of 400 – 450 ml.
