What is spruce jelly
Delicate jelly full of the scents and flavors of the forest, made from young spruce shoots and Douglas fir. The shoots are first steeped in a thick, fragrant syrup, which, when combined with other ingredients, creates a unique jelly with a citrus-forest aroma. The taste is sweet, with a subtle salty hint and a tartness reminiscent of white wine.
Perfect with cheeses and fish
So how best to serve this distinctive spruce-citrus aroma and flavor on a plate? The jelly has proven to be perfect as a dipping sauce for mild cheeses, grilled vegetables, or baked or grilled fish. It also pairs wonderfully with mushrooms. At the same time, it serves as an ingredient in mixed drinks, adding originality.
How the jelly is made
Traditionally, young spruce shoots are preserved in sugar to prepare a syrup for treating colds. We decided to use these shoots differently and make jelly from them. In collaboration with the forests of the city of Brno, we assisted with the pruning of trees in the Moravian Karst, where we encountered not only spruces but also Douglas firs. Their shoots have a distinctive aroma reminiscent of lime, which, combined with spruce, created a unique taste experience that sets our product apart. The harvested shoots are then packed into barrels and sprinkled with sugar, where they age for several months. The sugar draws out the water with flavor and aroma from the twigs, resulting in a thick, fragrant syrup. Finally, everything is heated, the syrup is strained, and by adding other ingredients, this unique spruce jelly is created.
