The Belly of Black Pig from Bigorre is a rare and refined charcuterie, made from black pigs raised freely in the meadows and undergrowth of the Pyrenean foothills. This ancient and protected breed is distinguished by the exceptional quality of its meat, rich in flavors and melt-in-the-mouth texture. Salted and then dried according to traditional know-how, the belly reveals a generous taste, slightly marbled, and a texture that melts in the mouth. It can be enjoyed as an appetizer, in thin slices on a charcuterie board, or serve as a gourmet base for many culinary preparations: pasta, omelets, grilled vegetables, etc. Butcher's tip: To savor the Belly of Black Pig from Bigorre, grill it over medium heat for a few minutes on each side until it becomes crispy and golden. You can also enjoy it raw, thinly sliced, at room temperature, to appreciate the rich, melting, and fragrant qualities of this exceptional product.
