The tenderloin is the noblest cut of pork, with unparalleled tenderness and flavor. It is the pork cut that best accommodates innovative blends. It can be enjoyed in various ways, perfect for sharing a meal for two, with family, or among friends. Our Italian Tenderloin is made from pork tenderloin sourced directly from the Roussaly slaughterhouse in Lacaune and its breeders from the A.P.O (Association Porci d'Oc). It is a blend with fragrant notes of parmesan, acidity from sun-dried tomatoes, enhanced by coppa and fresh basil notes. Butcher's tip: Cook your Italian tenderloin at 180 °C for 30 to 35 minutes in the oven, or in a skillet over medium heat for 20 to 25 minutes with a bit of olive oil. Baste it regularly, then let it rest for 5 minutes before serving to reveal all the sweetness of the pork and the sunny flavors of the Italian garnish.
