A true emblem of Jura gastronomy, Morteau sausage is made from rigorously selected pork and slowly smoked over coniferous wood. This traditional method gives it its amber color, tender texture, and deep smoky aromas. Recognizable by its bold flavor and characteristic wooden chain, it can be enjoyed in a sauerkraut dish, with lentils, in a stew, or simply sliced with steamed potatoes. At Maison Lascours, we honor this iconic charcuterie for its impeccable quality and authenticity. A rustic, generous, and friendly piece, just the way we like it. Butcher's tip: Never prick your Morteau sausage before cooking; this is the secret to preserving all its juiciness and smoky aromas! Immerse it in simmering water (without boiling) and let it cook gently for 35 to 40 minutes. Serve it hot, accompanied by sauerkraut, lentils, or a gratin dauphinois for a comforting winter meal.
