Quince is among the least common and simultaneously the rarest fruit distillates. It is made from quinces – a fruit that looks rather unattractive, has a leathery skin and is practically inedible until overripe.
However, quinces perfectly showcase the magic of distillation.
This stubborn fruit is among the most complicated to prepare for fermentation. The reward comes only after distillation, when the quince reveals all its beauty. The taste presents a harmonious mix of apple and pear, complemented by an incredibly appealing, fresh lemon note, making quince one of the most aromatic fruit distillates ever.
Quince is a beautiful example of how magical distillation can be.
From something you don’t want to eat, something you want to drink is created.
And a lot.
Serving
We recommend serving at a temperature of 12–18 °C to highlight the pronounced citrus aroma and delicate fruit structure. Chilling would unnecessarily suppress this character.
