Choosing Tarnais pigs for our pork belly and other pork cuts allows us to guarantee you pork meat of increasingly higher quality. The pork belly is also known as lean bacon; indeed, in this cut, the amount of meat is greater than its opposite. Its opposite is found on the back of the pig and consists almost entirely of fat; it is called fatty bacon, or simply bacon. Lean bacon is also used to prepare ventrèche, lardons, and notably the famous British bacon. Fresh pork belly is also used for charcuterie preparations such as sausages, salamis, and others. Pork belly is a choice cut, and there are as many different pork belly recipes as there are varieties of ventrèche.
