Summer truffle (or Tuber aestivum) is a fresh product of very high quality that can be consumed during the months when the more well-known and common truffles, such as black truffle (winter truffle) or white truffle, are not produced. It is a less exclusive truffle than winter truffle or white truffle, as it does not require such demanding soils and can be produced more easily. Consequently, the flavor of the summer truffle is more delicate and mild.
Summer Truffle Season
The summer truffle season usually falls between the months of May and September, with the hottest months (July and August) being when it reaches optimal ripeness. However, starting in June, high-quality summer truffles can already be purchased.
Price of Summer Truffle
The price of summer truffles is much lower than that of winter truffles or black truffles, as they are easier to produce and harvest. Their price is usually around €200 per kilogram.
Differences Between Summer Truffle and Black Truffle
The summer truffle is a delicatessen product and more economical than the black truffle. It is dark on the outside with a pyramidal crust. The color of its interior is cream and hazelnut tones. If you have never tried summer truffle but have tried winter truffle, it is easy to explain the differences regarding the quality and properties of Tuber aestivum. The summer truffle has a less intense flavor and is used in the same culinary contexts as black truffle, without achieving the same intensity but maintaining the truffle essence.
