The Valençay AOP is an iconic goat cheese from Berry, recognizable by its truncated pyramid shape and its gray-blue ash rind. Made from raw milk of alpine or saanen goats. Its melting texture and slight acidity make it a balanced cheese, appreciated by goat cheese lovers. Valençay is ideally enjoyed with a dry white wine from the same appellation, such as a Valençay AOC, or a Sauvignon Blanc, which highlights its floral notes without masking its finesse.
