Winemaker's Diary:
The grapes were hand-picked into 20 kg crates. After destemming and crushing, fermentation took place in a stainless steel vinifier until dry. After fermentation, it was pressed and inoculated with bacteria for malolactic fermentation. This was followed by the malolactic fermentation process. Subsequently, the wine was transferred to oak barrels, where it aged for another 9 months and later into bottles, where the vintage matured.
Wine Service:
At a temperature of 14 - 16 °C in Bordeaux-style red wine glasses with a volume of 550 – 600 ml.
Food Pairing Recommendation:
Venison ragout with cranberry sauce, smoked duck breast with shallots, grilled venison back on rose hip sauce.
