Butternut squash (Cucurbita moschata) is a winter squash originating from South Africa. It is an edible squash whose orange-colored flesh has a sweet taste reminiscent of hazelnut. It can be roasted, pureed for delicious cream soups or mashed, used in casseroles, and for making pastries and cakes. In a dry and cool place, it can be stored for more than 9 months. Its flavor becomes more intense over time as it ripens. The stems should be preserved to prevent dehydration. Once cut, it can be stored in the refrigerator wrapped in kitchen foil. Peeled and cooked, it can also be frozen. The flavor can be enhanced by adding brown sugar or apple syrup. It can be used for sweet dishes, soups, pies, and is excellent when steamed, boiled, or roasted.
