First, we gently slice the eggplants, salt them, and weigh them down, then allow them to rest for 24 hours. This is followed by a gentle pouring of a special mixture of vinegars and spices, we weigh them down again and let them rest for another 24 hours. On the third day, we gently pickle the eggplants in olive oil with aromatic herbs and spices. This harmony of flavors is excellent as an appetizer or snack.
