Malvasia - Baby 2024

Harvested for the first time at the end of August 2024, the grapes of Malvasia for Baby were handpicked with utmost care. Following destemming, the grapes underwent crushing and a meticulous three-day maceration process. It's worth noting that fermentation occurred spontaneously, showcasing the wine's natural development. The cap formed during maceration was gently submerged every three hours. After this period, the wine underwent pressing and was transferred to stainless steel containers, where it matured on fine lees for an additional five months. The wine was bottled without filtration, and no sulfur was added during the process.

Tasting Notes:

- Colour: Baby 2024 boasts a captivating golden yellow hue, and due to its unfiltered nature, it possesses a slight haze.
- Aroma: On the nose, expect pronounced notes of highly ripe citrus, pear peel, and delicate herbal hints, particularly lemongrass and sage.

- Taste: The palate delivers a continuation of ripe pear peel and citrus notes, joined by juicy red grapefruit and a distinctive saline minerality that adds depth. The texture is moderately buttery, a result of maturing on fine lees. The well-expressed and juicy acids are characteristic of the Istrian region. The finish is fairly long, leaving a pleasantly fruity aftertaste. In the background, subtle yeast aromas emerge, a characteristic that tends to appear in the initial phase of macerated white wines without the addition of sulfur and gradually fades after a few months.
