Mountain cheese is made from unpasteurized milk during the summer when cows graze freely in the Matjaž hills. It matures for at least three months in the mountains, gaining the right aromas and flavors. During the cheese-making process, the cheesemaker adds wine stone powder to the mixture, which is obtained from cleaning wooden wine barrels.
